Step by Step Rollkucken Recipe Rollkucken Makes: 35 pieces Ingredients • 1 Cup Buttermilk • 1/2 Cup Cream • 3 Eggs • 1.5 tsp salt • 3 tsp baking powder • 1/2 tsp baking soda • 6 cups of Flour (720 grams) Preparation • In a stand Mixer or in a large bowl; mix all Ingredients except flour, until all ingredients are well combined. • Next start adding flour, 1 Cup at a time, attach Dough hook after 3 cups of flour are added. • Knead until all the flour is incorporated and the dough is soft and not sticky. • Leave dough in the bowel and set aside to rest for 15 min. • Roll out dough to about 1 cm of thickness; cut into strips, then rectangles and a 2 inch slit in the middle of the rectangle to make an opening to twist. • Bring one end of the rectangle, tuck into the slit and pull through. • In a Skillet or frying pan add oil, about 1 inch and heat over medium high heat. • Place a few into the heated oil and fry each side until golden on both sides. • Serve with Delicious Watermelon Enjoy!! *I Measure the flour; 120g for each cup of Flour, some pack it full and some do loosely . Cover and rest for 10 minutes. • Divide the dough into 8-10 balls, cover, and let rest for 15-30 minutes. • Roll each ball into a thin circle (8-10 inches). • Cook each tortilla in a hot skillet for about 30 seconds per side until bubbly and lightly browned. • Keep cooked tortillas warm under a towel and repeat with remaining dough. Step by Step Fruity Pebbles Sugar Cookies Recipe Fruity Pebbles Sugar Cookies Makes: 24 - 30 Cookies Ingredients 1 Cup Butter - at room temperature 1 1/4 Cup Sugar 1 Egg, at room temperature 2 tsp Vanilla extract 2 1/4 Cups of Flour 1 Cup Fruity Pebbles Cereal 1/2 tsp baking powder 1/4 tsp baking soda 1/2 tsp salt + 1 1/2 Cup Fruity Pebbles Cereal for dipping cookie dough before baking. Preparation • Preheat Oven to 350°F, Line baking Sheets with Parchment paper • Cream together the Butter and Sugar until smooth, using a hand mixer or a stand mixer. Add in the Egg and vanilla, beat to incorporate ingredients. • In a separate Bowl, Combine the rest of the ingredients. After combining the dry ingredients, add them to the Butter mixture. Mix on low speed until all ingredients are well combined. • Using a ice cream scoop; scoop out dough, dip and roll in the a bowl of Fruity Pebbles cereal, and place on prepared cookie sheet leaving 2 inches between each cookie. • Bake the cookies for 12-14 min at 350°F, edges just turning golden, soft in the middle. • Cool on the baking sheet for 10 min, transfer to cooling rack to cool completely. Step by Step Belgian Waffles with White Sauce & Strawberries Recipe Belgian Waffles with White Sauce & Strawberries Makes: 5 Waffles Ingredients WAFFLES 》 • 2 cups Buttermilk heated to 105°F • 3 TBSP sugar • 2 tsp yeast • 1 1/2 teaspoons baking powder • 1/2 tsp salt • 1/2 tsp cinnamon (optional) • 1/2 cup melted butter • 3 eggs; beaten • 1/2 - 1 tsp Vanilla extract • 2 1/4 cups flour WHITE SAUCE 》 • 1/3 cup sugar • 2 TBSP corn starch • 1/4 tsp salt • 2 cups milk • 3 TBSP heavy cream • 2 eggs • 1 tsp vanilla extract • 2 TBSP butter TOPPING 》 • Strawberries cut into pieces Preparation - In a bowl/mixer; add heated buttermilk, sugar and yeast. Mix to incorporate, rest for 10 minutes to bloom. - Add the remaining ingredients in order; baking powder, salt, cinnamon, melted butter, beaten eggs, vanilla extract, mix until well combined. - Add in the flour and mix lightly just until flour is incorporated. Do not over-mix. - Cover and rest for 30 minutes, meanwhile make the white sauce. - In a saucepan; mix together sugar, cornstarch, and salt. Whisk in milk, cream, and eggs. Over medium-high heat mixture until bubbles pop on the edges. STIR CONTINUOUSLY. Mixture will burn onto saucepan if you don't stir. - Remove from heat; stir in vanilla extract and butter. Cover until waffles are ready. - Heat waffle maker, spray with non-stick spray. Add 1 cup* of waffle mixture and cook according to waffle maker directions. Until golden. Set onto a rack to avoid soggy waffles. Continue until all the mixture is used. *my waffle maker uses 1 cup per batch. Test with less if you have a smaller waffle maker. Fold in the Peanuts. • Scoop the cookies dough and place them onto prepared cookie sheets. • Bake at 350°F for 10-12 minutes * Baking time depends on oven and baking sheets. Start by insuring your oven is preheated at 350°F with a oven thermostat, then start at the 10 minute mark, check cookies and add more time if needed. Step by Step Mexican Lasagna Recipe Mexican Lasagna Makes: 6 Servings Ingredients • 6 lasagna sheets (Oven ready Lasagna noodles) • 3 Cups Spaghetti sauce • 2 Cups Ground Beef; cooked • 2 Cups Beans; cooked & drained • 16 -18 slices of Pepperoni • 1/2 Red onion; sliced • 2 Cups Shredded Cheese Preparation Layering & Preparation: Preheat oven to 350°F, prepare a 9x13 baking dish. 1 • Spread 1/2 Cup of Sauce into the bottom of the baking dish 2 • Place 3 uncooked lasagna sheets on top of the sauce. 3 • Next add Ground Beef, Beans and onions. 4 • Place half of the Pepperoni slices on top, then top with 1/2 Cup of shredded cheese. 5 • Spread 1/2 Cup of Sauce, then top with 3 uncooked lasagna sheets, continue by spreading on the remainder of the sauce, add the rest of the shredded cheese and place the remaining Pepperoni slices on top. 6 • Cover loosely with foil 7 • Bake, covered, in a preheated 350°F (180°C) oven, for 45 minutes. 8 • Uncover; Bake for an additional 10 minutes. Step by Step Barbacoa cuauhtemoc style Recipe Barbacoa cuauhtemoc style Makes: 6-8 servings Ingredients •2 TBSP oil •2 Kg beef - outside round roast •8 cups of beef broth* •2 TBSP salt •1 small onion •2 TBSP apple cider vinegar •1 TBSP ground oregano •1/2 TBSP ground cumin •1 tsp ground thyme •1/4 tsp garlic powder •6 black peppercorns •4 bay leaves •3 TBSP cornstarch + 1/2 cup water *Make your own beef broth with Beef bouillon: 8 Cups Water + 1/2 Cup Beef bouillon Preparation •Heat 2 tablespoons of oil in a frying pan over medium-high heat. Once the oil is hot, add the meat and brown it on all sides. •Transfer the browned meat to the Slow Cooker, then cut the onion in half and add it along with bay leaves and peppercorns wrapped in a spice bag or ball. •Pour the broth into the Slow Cooker, then add salt and apple cider vinegar. Stir, cover with a lid, and cook on high for 5 hours or low for 10 hours. Ensure the internal temperature reaches 160°F for well done. •Using tongs, remove the meat from the Slow Cooker and place it in a heat-safe dish or on a cutting board. •Discard the onion, and remove 6 cups of broth from the Slow Cooker into another container, saving the juices in case you want to add more later. •Add spices to the broth in the Slow Cooker. Mix 3 TBSP of cornstarch with ½ cup of water to create a slurry, then pour this mixture into the Slow Cooker, stir to dissolve and mix. •Begin shredding the meat with a fork; it should fall apart easily. Remember to shred with the grain. You can also use a knife to cut it into smaller pieces, then return the shredded meat to the Slow Cooker for an additional 30 minutes on high. •Adding more broth to the barbacoa is a personal preference. • Once finished, serve immediately. Start by removing the stems and seeds from the chiles. 2. Place the chiles in a pot and add enough water to cover them. 3. Bring the water to a boil, then remove the pot from heat and cover it. Let the chiles soak for about 20 minutes. 4. While the chiles are soaking, char a tomato, an onion, and clove of garlic until they are nicely roasted. 5. In a blender, combine the soaked chiles, charred tomato, onion, garlic, spices, and about 2 cups of the reserved chile water. 6. Blend the mixture until it reaches a smooth, silky texture. 7. Finally, strain the sauce to remove any remaining scraps, ensuring a smooth consistency. Chilaquiles: 1. Place tortilla chips in a bowl and generously pour chile colorado sauce over them, tossing gently. 2. Let the chips rest for 5 minutes to soften in the sauce. 3.
