Step by Step Lemon-Raspberry Cream Cheese Rolls Recipe Lemon-Raspberry Cream Cheese Rolls Makes: 16 Rolls Ingredients ~Dough: 1 Cup Milk - warmed to 110°F 1/4 Cup Sugar 3 tsp instant yeast 1/4 Cup Butter - Room temperature 1/2 tsp salt 1 Egg 3 Cup Flour *add more if needed for a Soft dough, *1 TBSP at a time. ~Filling: •1 Block Cream Cheese, room temperature. •1/2 Cup Sugar •2 TBSP Cornstarch or Vanilla Maizena •1 tsp Vanilla extract •1/4 Cup Lemon Pie filling Powder •1/4 Cup Raspberry Jello Powder *Do not prepare the Lemon or Jello Powder, you will sprinkle the Powder (dry contents) on to the dough before rolling. ~Icing: 2 Cup Powdered Sugar 2 TBSP Lemon Pie filling Powder 1-2 TBSP Milk *depending on your desired consistency. Preparation •In a Medium size Bowl add Milk, Sugar, Yeast, Butter, Salt, Egg and half of the Flour. Mix together until well combined. •Keep adding in the remaining Flour, 1/2 Cup at a time •Knead for a nice Soft dough. •Cover and let rise until doubled in size •While the Dough is rising, make the Cream Cheese mixture and prepare your baking sheets or pan with Parchment Paper. •In a small bowl, mix together Cream Cheese, Sugar, Cornstarch and Vanilla extract. Combine well and set aside. •Once the Dough as doubled in size, place in a cleaned surface. •With a Pin Roll, roll into a Rectangle shape. •Spread on Cream Cheese Mixture •Sprinkle on Raspberry Jello Powder, covering the Cream Cheese mixture •Sprinkle on Lemon Pie Powder. •Next Roll the dough, starting on the long side. •Once Rolled, cut with a Knife or use thread to make your rolls. •Place rolls on a prepared baking sheet or pan, cover and let rise until doubled in size. •Preheat oven to 350°F while rolls are rising. •Bake them for 25-30 min, until internal temperature reaches 200°F. •Once baked, remove from oven and let cool. •While cooling, make the icing. •Mix together Icing ingredients until smooth, if needed add 1 more TBSP of Milk for a thinner consistency. •Glaze Rolls with pipping bag or spread on with a Spatula. Step by Step Pizza Rolls Recipe Pizza Rolls Makes: 20 rolls Ingredients •1 1/3 cup warm water •4 1/2 tsp instant yeast •2 tsp sugar •4 tbsp Oil •1 1/2 tsp salt •1/2 tsp garlic powder •1 tsp Paprika •1 tsp Oregano •1 tsp Parsley •1/2 tsp thyme •3.5 cups flour (520g) Filling: 1.5 Cup of pizza sauce 2 cups Mozzarella Cheese 1 cup finely chopped pepperoni Preparation - In a small bowl, stir together water, yeast and sugar, set aside and proof until frothy. - In a Stand Mixer with dough attachment, combine all the dry ingredients together. - add in Yeast mixture and Oil. - Mix together until edges come clean, continue Kneading for 10 min. - Take out of the Bowl, round into smooth shape. Place in a Oiled Bowl, Cover and let rise until doubled in size. - Once dough has risen, roll out pizza dough into a rectangle. - Spread pizza sauce on dough to within 1" of the sides, then top with pepperoni and cheese. - Roll the dough up, not to tightly. Pinch the seam to seal. - Slice with a bread knife, 2" rolls. - Place the rolls on a parchment lined baking sheet 1 inch apart. - Cover and rise for 40 minutes. - Preheat oven to 425° F, while rising Rolls. - Bake for 15-18 minutes, until light golden brown. - Store Leftovers in a Airtight container, place in the refrigerator. Step by Step Tacos Recipe Tacos Makes: 3 Servings Ingredients •10 Corn Tortillas •1/2 Cup Oil for frying Tortillas •1 lb Ground Beef •1/2 Onion; chopped •1 garlic clove; minced •1 TBSP seasoning Seasoning; store leftovers. •2 TBSP Cornstarch •4 tsp chili powder •2 tsp Italian seasoning •2 tsp salt •2 tsp paprika •2 tsp Chicken Bouillon powder •1 tsp onion powder •1/2 garlic powder Preparation •In a small bowl; mix together the Seasoning. •Chop Onion into small pieces, mince garlic. •In a medium sized Sauce Cooking Pot; add Ground Beef, Onion, garlic and 1 TBSP seasoning. •Cook until internal temperature reaches 160°F, stirring occasionally. •Strain if needed to remove excess grease. •While Ground Beef is Cooking, add Oil to a frying pan Medium High heat. •Place Corn Tortilla in the Hot Oil; using Tongs, fold Tortilla in half and continue frying for one minute on each side. •Take out of the Oil and place on a Plate lined with a Paper towel to soak up the excess grease. •Continue this with all the Tortillas. Step by Step Homemade Bone Broth Recipe Homemade Bone Broth Makes: Ingredients 2-3 pounds bones; cooked or roasted (chicken, turkey, beef, or pork) 2 tablespoons apple cider vinegar (helps extract nutrients from bones) Water (enough to cover the bones) Optional: herbs like thyme, bay leaves, or parsley Preparation If using raw bones, roast them in the oven at 400°F for 30 minutes to enhance the flavor, but this is optional. Place the bones in the slow cooker with the apple cider vinegar, and any herbs you desire. Pour enough water into the slow cooker to cover the bones, leaving some space at the top to avoid overflow. Set the slow cooker to low and let it cook for 12-24 hours. The longer it cooks, the richer and thicker the broth will be. Once cooking is complete, use a slotted spoon to remove the bones. Strain the broth through a fine mesh sieve or cheesecloth. Let the broth cool before transferring it to jars or containers. You can refrigerate it for up to a week or freeze it for later use. Step by Step Banana Bread Recipe Banana Bread Makes: 2 Loafs Ingredients •1 Cup of White Sugar •1 Cup Brown Sugar •1/2 cup butter, softened •2 eggs •4 Bananas, mashed •1 Cup Buttermilk •2 Cups Flour •1 tsp Baking Soda •3/4 tsp salt 1 Cup Walnuts Preparation -Pre-heat Oven to 350°F, Prepare 2 Loaf Bread pan with Parchment Paper or spray to avoid sticking. -In a Large Bowl, Cream together Sugars and Butter. -Next add in the Eggs, mashed Bananas and Vanilla extract, mix well. -Next mix in the Buttermilk -Continue by adding the Flour, Baking Soda and Salt, mix until ingredients are well mixed. -Fold in the Walnuts, just enough to incorporate. -Pour batter into the prepared baking Pans, divided equally by the 2 pans. -Bake for 40-50 min, until internal temperature reaches 205°F. -Remove from Oven, leave in the baking pan for 20 min. Step by Step Bienenstich Cake Recipe Bienenstich Cake Makes: 2 round cakes Ingredients •1 Cup Sugar •1/2 tsp Salt •1 1/2 Cup Flour •1 1/2 tsp Baking powder •1 tsp Baking soda •1/4 Cup Vegetable oil •2 Eggs •1/2 tsp Vanilla extract •1 Cup Buttermilk Pudding ingredients: • 1 pkg Vanilla instant pudding • 2 Cups heavy cream Honey-Almond Topping: • ¼ cup unsalted butter (4 TBSP) • 1.5 Cups sliced almonds • 1 Cup Brown Sugar • 1 Cup Honey • pinch of Salt Preparation ~ Cake - Pre-heat oven to 350° F, prepare 2 round cake pans (standard size) spray with nonstick spray, and set aside - In a Medium sized bowl; mix the dry ingredients, in a separate bowl; mix the wet ingredients. - Incorporate the wet ingredients into the dry ingredients and mix until smooth. - Divide the batter evenly into the 2 prepared cake pans, and cover with Foil. - Bake at 350°F for 35 minutes - Take out, remove foil and cool completely. ~ Prepare the Vanilla pudding - With a hand mixer; Mix the package of instant vanilla pudding with 2 cups of Heavy Cream until smooth. ~ Honey - Almond topping: - In a saucepan on medium-high heat; add butter and sliced almonds and stir occasionally until almonds are slightly toasted. - Turn heat to medium-low, and add brown sugar, honey, and a pinch of salt. - Stir to incorporate; let simmer for 3 minutes or until sugar is melted and resembles syrup. Assembly: - Once cooled; level and split the cake, holding the cake steady with one hand, use a long serrated knife to cut the cake into even layers. - Spread half of the pudding evenly on one layer. Gently replace the top layer of the cake - Evenly pour over half of the Honey-Almond topping on top of the cake. - continue the same step with the second cake. Slice and Enjoy! The original German Bienenstich Cake is a Yeast Cake with a Pastry Cream filling and a Honey-Almond topping. My Mom has made this recipe as prepared above for years and we love the taste. Maybe one day I will try to make the Yeast version and compare them. I hope you enjoy this version of the Bienenstich Cake as much as we do. Step by Step Chocolate Chip Cookies Cheesecake Cups Recipe Chocolate Chip Cookies Cheesecake Cups Makes: 6 Cups (4oz size) Ingredients • 2 Cups Chips Ahoy cookie crumbs (1 package of chips ahoy cookies) • 1 Block Cream Cheese • 1 Cup Whipping Cream • 2 tsp vanilla extract • 1/4 Cup butter; melted • 1/4 Cup + 2 TBSP Sugar Preparation - add cookies into food processor and pulse until fine crumbs form. Place crumbs into a bowl along with melted butter, mix until well incorporated. Set aside. - Add Whipping Cream, 1 tsp vanilla extract and 2 tbsp of Sugar into a mixer and whip until stiff peaks form. Set aside. - Next; mix together cream cheese, 1 tsp Vanilla extract and 1/4 Cup of sugar until smooth. Fold in the Whipped Cream until just combined. - Assemble Cups: 1.- 1/4 Cup of Crumbs into a 4oz plastic cup, press down gently with a spoon to pack crumbs. 2.- Next add 1/2 Cup of Creamcheese mixture into the cup, smooth with a spoon. *Divide leftover mixture into cups. 3.- For decoration; we placed 3 mini chocolate Chip cookie cereal on top. 4.- Close the containers with a lid and place in refrigerator for 3 hours or overnight. Step by Step Maseca Pecan Cookies Recipe Maseca Pecan Cookies Makes: 35 Cookies Ingredients •1 Cup Lard/Shortening •1 1/2 Cups Sugar •1/2 cup Whipping Cream •1 tsp Vanilla extract •3 eggs •2 Cups Maseca (Cornflour) •1 Cup All purpose Flour •2 tsp Baking Powder •1 tsp Baking Soda •1/4 tsp Salt •3 Cups Oatmeal •1 Cup Toasted Pecans Preparation • Preheat oven to 350°F, prepare your baking sheets lined with parchment paper. • In a large bowl or stand mixer Cream Lard/Shortening and Sugar for 1 minutes. • Add in Whipping Cream, vanilla extract and Eggs, mix for 2 minutes on low. • In a separate bowl; combine the Dry ingredients. • Add half to the Dry ingredients to the Wet ingredients, mix until combined. • Add the rest of the Dry ingredients and mix until all ingredients are incorporated. • Scoop Cookie dough onto prepared baking sheet, ice cream Scoop works great. • Flatten the dough lightly. I used a potato masher, dip in flour to prevent dough sticking to it while flattening. • Bake for 12 min at 350°F, lightly golden edges. • Cool on Baking Sheet for 5 minutes after, then transfer to cooling rack to cool completely. Step by Step Banana Cheesecake Cups Recipe Banana Cheesecake Cups Makes: 8-9 Cups (4oz size) Ingredients • 1 Banana Cream pudding box • 1 Block Cream Cheese • 1 Cup Whipping Cream • 2 tsp vanilla extract • 2 cups graham cracker crumbs • 1/4 Cup butter; melted • 2/4 Cups + 2 TBSP Sugar Preparation - Prepare Banana Cream pudding according to instructions on the box, set aside to cool. - Meanwhile; add Whipping Cream, 1 tsp vanilla extract and 2 tbsp of Sugar into a mixer and whip until stiff peaks form. Set aside. - in a seperate container; mix graham cracker crumbs, melted butter and 1/4 cup of sugar. Mix until well combined. - in a third bowl; mix together cream cheese, 1 tsp Vanilla extract and 1/4 Cup of sugar until smooth. - Fold in the Banana Cream pudding into the cream cheese mixture until just incorporated. - Assemble Cups: 1.- 1/4 Cup of Crumbs into a 4oz plastic cup, press down gently with a spoon to pack crumbs. Keep 1/4 cup of crumbs for topping. 2.- Next add 1/2 Cup of Pudding/Creamcheese mixture into the cup, smooth with a spoon. *Divide leftover mixture into cups 3.- Spoon or pipe prepared Whipping Cream on top of the Pudding/Creamcheese mixture. Step by Step Mongolian Beef & Rice Recipe Mongolian Beef & Rice Makes: 2 Servings Ingredients Beef: •1 pound flank steak •1/3 cup cornstarch •1-2 TBSP oil •1/2 cup low-sodium soy sauce •1/4 cup water •1/2 cup light brown sugar •2 tsp cornstarch + 2 tsp water (slurry) •1 clove garlic , minced •1 bunch green onion , chopped Rice: - 1 TBSP Butter - 1 Cup Rice - 2 Cups Beef Broth Preparation Preparation: ~ Slice the flank steak into 1/4” thin slices, across the grain of the meat. ~Add steak into a medium sized Bowl; sprinkle on 1/3 Cup cornstarch, mixing until steak is covered on all sides. ~Place 1 tablespoon oil in a large pan or skillet over medium-high heat. Cook the beef, until browned on both sides. *Work in 2 batches if working with a smaller pan, add more oil if needed. ~In a small bowl whisk together the soy sauce, water, brown sugar, and cornstarch slurry. *Mix slurry separate before adding to the mixture. ~In the same large pan; turn the heat to medium, add garlic and sauté for 20 seconds. ~Add sauce mixture and bring to a simmer. Cook, stirring, until slightly thickened, about 2 minutes. ~Return beef to the pan with the sauce and toss to combine. Cook for 1-2 more minutes until warmed through. ~Add green onions. Serve warm with a side of Beef Rice. Rice: ~ Add 1 TBSP of Butter and 1 Cup of rinsed Rice to a small pot over medium heat; Stirring occasionally to prevent burning, cook for 5 minutes. ~ Add 2 Cups of Beef Broth; cover, bring to a boil, lower heat and cook for 15 min covered. ~Fluff rice with a fork. Step by Step Lemon Chicken Gnocchi Recipe Lemon Chicken Gnocchi Makes: 4 Servings Ingredients •3 chicken breasts cut in half lengthwise •2 TBSP Butter •Salt, pepper and Chicken Bouillon powder. •1 TBSP butter •2 cloves garlic minced •1/2 cup chicken broth •1 TBSP lemon juice •1 cup heavy/whipping cream •1 pound uncooked potato gnocchi •1/4 cup Parmesan Cheese •2 cups fresh spinach Preparation -Cut the chicken in half, lengthwise. Season each side with salt, Pepper and Chicken Bouillon powder. -Place butter and Chicken Breast in the Skillet; heat skillet to medium heat. (Work in batches if necessary) flipping chicken to cook on both sides. -Cook Chicken Breast until internal temperature reaches 170°F. -Once cooked; remove Chicken from the skillet and set aside. -Place 1 Tbsp of Butter and Garlic in the skillet, cook for about 30 seconds. -Stir in the chicken broth and lemon juice and scrape brown bits from the bottom of the pan. -Add in the cream and gnocchi. Stir and ensure the gnocchi is submerged in the liquid. Let it bubble gently; for 10 minutes, stirring occasionally, don not pre cook Gnocchi. - Add in the parmesan cheese and spinach.
