Step by Step Smothered Porkchops Recipe Smothered Porkchops Makes: 3 - 4 Servings Ingredients •6 Boneless Pork Chops •1 Cup BBQ sauce •1 Cup Water •1 TBSP Italian seasoning •1/2 Red Onion; chopped •1 Cup Pineapple pieces Cucumber salad ingredients: •2 Large Cucumbers, sliced into coins •1/4 Red Onion, chopped •1/4 Cup Dill, chopped •1 TBSP Mayonnaise •1/2 TBSP Vinegar •1/2 TBSP Sugar Preparation Preparation for Salad: • Prepare your Cucumber Salad ahead of time for at least 1 hour of Refrigeration. • Slice Cucumbers into thin round slices, chop red onions and Dill into small pieces. - Mix together Mayonnaise, vinegar and Sugar. - Add all ingredients into medium sized Bowl, mix until all ingredients are well incorporated. - Cover and refrigerate for at least 1 Hour. Preparation of Pork Chops: • Preheat oven to 350 °F • Mix BBQ sauce and Water together • Pour 1/2 Cup of BBQ mixture in a Large baking Dish, (9x13) • Place Boneless Pork Chops in the baking dish. • Cover Pork Chops with the remaining BBQ mixture. • Sprinkle on the Italian seasoning, place the chopped Onions and Pineapple pieces on top of the Pork Chops. • Cover with Foil; bake at 350 °F for 30 min. Remove foil and bake for another 20 min. • Check internal temperature, cooked at well done when internal temperature reaches 160°F. Enjoy with Cucumber Salad and Homemade Beans. Step by Step Strawberry Bread Recipe Strawberry Bread Makes: 2 Loafs Ingredients Strawberry Bread ~Recipe below THE BREAD: • 3/4 cup sugar • 1/2 cup Margarine • 1/2 cup Buttermilk • 1 large egg • 1 tsp vanilla extract • 2 cups all-purpose flour • 1 teaspoons baking powder • 1/2 tsp baking soda • 1/4 tsp salt • 2 Cups diced strawberries + 2 TBSP flour ~ FOR THE GLAZE: • 1 Cup powdered sugar • 1/3 Cup finely diced strawberries • 1/2 tsp vanilla extract • 4 TBSP heavy cream or milk Preparation •Preheat the oven to 350 degrees, prepare 2 - 9"x5" bread pan, brush on melted butter and dust with Flour, remove excess Flour and set aside. •In a medium bowl, cream together the sugar and margarine. •Next; add in Buttermilk, Egg and Vanilla extract, combine. • Combine in the baking powder and salt. • Mix in 2 Cups of Flour and stir until just combined. • In a small bowl, toss together the strawberries and the 2 tablespoons of flour to coat the strawberries. • Fold the floured strawberries gently into the batter. • Pour equal amounts into 2 prepared 9"x5" bread pans • Bake at 350 degrees for 50-55 minutes. A toothpick inserted in the center of the bread should come out clean. • Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely. Glaze: • Combine the powdered sugar, melted butter, diced strawberries and extract in a small bowl. Step by Step Cream Cookies Recipe Cream Cookies Makes: 30 Cookies Ingredients Cream Cookies: •2 cups sugar •1 cup oil •1/2 cup milk •1 1/2 cup cream •4 teaspoons baking powder •2 teaspoons baking soda •1 teaspoon vanilla •1/2 tsp salt •3 eggs •4.5 -5 cups flour, cookie dough Consistency. Marshmallow filling: •1 1/2 TBSP Gelatin powder •1/3 + 1/2 cup water •1 cup white sugar •1 cup brown sugar •2 egg whites •2 TBSP corn syrup Preparation Cream Cookies: -Mix all the ingredients until smooth -Scoop onto cookie sheets -Bake at 350 for 12 min -Transfer to cooling rack to cool completely. Marshmallow filling: 1. Combine 1/3 cup water + gelatin powder in small bowl, set aside. 2. In small pot, combine sugars, corn syrup + 1/2 cup water. Stir over med/high heat and bring to a boil, then reduce to med/low and track temperature with a thermometer. 3. Once mixture hits 200°, start whipping egg whites to soft peaks. 4. When sugar mixture reaches 240⁰ F, remove from heat and slowly pour into whipped egg whites while mixer is on high speed. 5. Place gelatin mixture into the hot pot that sugar was in, stir until melted then add to the whipping marshmallow. 6. Continue mixing on high speed until bowl is barely warm. The Marshmallow will be thick, fluffy, glossy + stiff. 7. Add Marshmallow to piping bag for piping. 8. Use immediately and don't store in a piping bag. 9.Dip in coconut, peanuts or nuts (optional) 10.Freeze before dipping in melted chocolate. Click for step by step pictures

Step by Step Chicken Lasagna Rolls Recipe Chicken Lasagna Rolls Makes: 4 Servings Ingredients •4 Cups Shredded Chicken •12 Pre-Cooked Lasagna Noodles •3 Cups Mozzarella Cheese For The Sauce: •1 cup water •1 cup Cream •1/4 cup butter •2 TBSP flour •½ tsp salt •1/4 tsp pepper •2 tsp Chicken bouillon powder •1 TBSP Parmesan Cheese ~ Cucumber Salad Ingredients: •2 Large Cucumbers, sliced into coins •1/4 Red Onion, chopped •1/4 Cup Dill, chopped •1 TBSP Mayonnaise •1/2 TBSP Vinegar •1/2 TBSP Sugar Preparation • Prepare your Cucumber Salad ahead of time for atleast 1 hour of Refrigeration. • Slice Cucumbers into thin round slices, chop red onions and Dill into small pieces. - Mix together Mayonnaise, vinegar and Sugar. - Add all ingredients into medium sized Bowl, mix until all ingredients are well incorporated. - Cover and refrigerate for at least 1 Hour. •Pre-Cooked Shredded Chicken (We used left over rotisserie chicken) •Pre-Cook Lasagna Noodles, lay flat on baking sheet lined with parchment paper. • Prepare Sauce: - In a small saucepan, add Cream, Water and Butter, on medium heat. Bring to boil, stirring occasionally to prevent burning. Whisk in Spices; flour, salt, pepper, Bouillon and Parmesan Cheese. - Bring to a boil, lower heat. Boil for 5 min. Turn off heat and set aside. - Preheat oven to 350°F • Prepare Rolls: 1- Take one Lasagna Sheet 2- Place Shredded Chicken on the Lasagna Sheet 3- Scoop sauce on top of the Shredded Chicken 4- Add Mozzarella Cheese on top of the Sauce. 5- Roll Lasagna Sheet together, tuck closest end under chicken and continue rolling. 6- Place Roll in a greased Baking Dish, loose end downward, closely together. 7- Continue Rolling all Lasagna Sheet in the same order. - Once complete; pour remaining Sauce on top of the Prepared Lasagna Rolls, add remaining Mozzarella Cheese (add more Cheese if desired), sprinkle on Parsley flakes for Garnish. - Bake at 350°F for 40 minutes, until Cheese is melted and slightly browned. Step by Step Green Chili Enchilada Soup Recipe Green Chili Enchilada Soup Makes: 6 Ingredients - 1 tbsp butter - 1 onion; diced - 2 Cups Roasted Anaheim Peppers; pieces - 1 tsp salt - 1/2 tsp pepper - 1 tsp garlic powder - 1 tsp cumin - 1 TBSP Italian seasoning - 4 Cups shredded cooked Turkey or Chicken - 6 Cups Turkey or Chicken broth - 1 can Green chili Enchilada sauce - 1 Cup Heavy cream - 1 Cup shredded mozzarella cheese - Fried Tortilla strips (for topping) Preparation - In a large pot over medium high heat; add butter and diced onion. Cook until onions are slightly translucent. - Add Roasted Anaheim Pepper pieces and spices to the pot, stir until combined. - Next, add the cooked shredded Turkey or Chicken. *I used leftover turkey from our Canadian Thanksgiving meal. - Pour in the broth and the can of green Chili Enchilada sauce. Combine everything well. Bring to boil over medium heat. - Once boiling; turn down the heat. Stir in heavy cream and shredded cheese. - Serve hot, top with fried tortilla strips. ENJOY! Step by Step Apple Oatmeal Cake Recipe Apple Oatmeal Cake Makes: 6 Servings Ingredients •1 cup oats •1 large apple, peeled and chopped •3 Tbsp honey •1 tsp vanilla •1 tsp cinnamon •1/2 tsp baking soda •1/2 tsp baking powder •3 tbsp yogurt •2 eggs •1 Tbsp butter Preparation -Preheat the oven to 350°F. -Put all ingredients in a blender or Food processor and blend until all ingredients are smooth and mixed. -Line a smaller sized baking pan with parchement paper and pour the mixture inside. -Bake for 20-30 minutes or until a toothpick comes out clean. -After baking let the cake cool off, slice, put the slices in an airtight container in the fridge for at least an hour. Step by Step Carrot Cake Rolls Recipe Carrot Cake Rolls Makes: 2 Rolls Ingredients •10 Eggs •1/2 Cup Milk •1/2 Cup Oil •1 tsp Baking Powder •1 Box Carrot Cake Mix •1/4 Powdered Sugar (for dusting) Filling: •1 block Cream Cheese, room temperature •1/2 Powdered Sugar •1 Cup Whipping Cream •1 tsp Vanilla extract Preparation • Heat oven to 375° F, Prepare 2 (12"x 16") baking sheets, line with parchment paper or spray and dust with Flour. • In large bowl, beat Eggs, Milk and Oil with electric mixer or stand mixer on high speed about 6 minutes. • Add cake mix and baking powder; beat on medium speed 1 minute. • Pour batter into prepared baking sheets, dividing dough equally into the sheets. • Bake 14 to 16 minutes or until cake springs back when lightly touched in center. • While baking; on a clean flat surface, lay a kitchen towel and sprinkle with Powdered Sugar. • When baking is done, remove baking sheet from the oven if you used parchment paper, immediately turn cake upside down onto clean kitchen towel sprinkled with powdered sugar; peel away parchment paper. If you sprayed and dusted with Flour, run a knife along the sides to make sure they are loose, then turn upside down onto towel. • While still hot, carefully roll up cake and towel from narrow end. • Cool rolled-up cake 20 minutes at room temperature, and then about 1 hour in refrigerator. • Prepare filling while chilling; - Whip 1 Cup of Whipping Cream + 1/2 Cup Powdered Sugar and Vanilla extract until soft peaks form, Set aside. - Cream the Cream Cheese until smooth, mix whipped cream to the smooth cream cheese until combined. • Unroll cake carefully, and remove towel. Allow the end to remain slightly curled. • Spread Cream Cheese mixture evenly over cake's surface. • Re-roll filled cake, wrap in parchment paper and refrigerate 30 minutes. • Dust with Powdered Sugar (optional) • Cut and Enjoy!! * Can use smaller baking sheets, will yield 3 rolls if using smaller Baking sheets. Press down to pack together and even out mixture. • Cover and refrigerate for 2 hours to harden • Remove from container and Cut into smaller. • Enjoy and refrigerate leftover in a Airtight container. Step by Step Chile Relleno casserole Recipe Chile Relleno casserole Makes: 6 servings Ingredients • 8-10 Anaheim peppers; roasted, peeled • 2.5 cups mozzarella cheese; shredded • 3 Cups ground beef; cooked ~ Batter: • 1 3/4 cups milk • 2 eggs • 2 teaspoon salt • 2 cup flour • 1/2 tsp baking powder Preparation • Preheat oven to 350°F • In a 7.5"x11" casserole dish; layer ingredients in the following order. - Peppers - Ground beef - Shredded cheese - repeat • Mix all the ingredients for the batter and pour batter into the casserole dish, covering all layers, top with some shredded cheese. • Place casserole dish into the oven, bake at 350° F for 50 - 60 minutes, batter should be browned and set. • Enjoy with refried beans and vegetables. Step by Step Chile Colorado Recipe Chile Colorado Makes: 2 Servings Ingredients For the Sauce: •8 dried Guajillo chiles •2 dried Ancho chiles •1 Arbol Chile (if you like it spicy, I did not add this one) •1/2 medium yellow onion, quartered •1 medium Tomato •1 clove garlic •1 teaspoon dried oregano •1 teaspoon salt •1/2 teaspoon cumin •reserve 2 Cups of Chile Water. For the meat •2 pounds beef stew meat, cut into 1/2 inch squares •2 tablespoons all purpose flour •2 teaspoon salt •1/4 teaspoon black pepper •2 tablespoons cooking oil •2 bay leaves Preparation Chile Colorado Sauce: -Remove stems and seeds *Leave seeds in if you like it spicy -Place in a pot, add water to cover Chiles. -Bring to a Boil, remove from heat and cover for 20 min. -Charcoal the Tomato, Onion and Garlic. -Place in a Blender: Chiles, Tomato, Onion, Garlic, Spices and 2 Cups of the reserved Chile Water -Blend well, as smooth as you can -Strain the Sauce and discard the leftover scraps. Meat: -Sprinkle meat with Salt, Pepper & Flour, cover each side -Heat up 1 tbsp of Oil in a Skillet (medium heat) -Place Stew Meat chunks in the skillet -Brown all sides (about 2 min each side) -Place Meat into a Slow cooker -Pour Sauce over meat -Stir and add in Bay leaves -Cook in a slow cooker on Low for 8 hours, or on high for 4 hours. -Meat should be soft, almost falling apart. -If thicker sauce is preferred, add in cornstarch slur (2 tsp mixed with 1/2 of water) add the slur to the Chile Colorado about 1/2 hour before done. -Serve with your favorite side Dish. Step by Step Chili Supreme Recipe Chili Supreme Makes: 10-12 servings Ingredients •2 lbs ground beef •1/2 lbs ground pork •1 cup bacon pieces •1 inch chorizo •20 pepperoni; quartered •3.5 cups cooked kidney beans •3.5 cups cooked pinto beans •1 onion; chopped •1/2 yellow bell pepper; chopped •1/2 red bell pepper; chopped •3 cups tomato; diced •2 cups marinara sauce •1/2 tsp garlic powder •1 tsp oregano •1/2 TBSP Italian seasoning •1/4 tsp ground cumin •2-3 cups water (personal preference) Preparation Pre-cook: In a large pot, brown the ground beef and ground pork over medium heat until thoroughly cooked. Drain any excess fat and set aside. In a frying pan, fry the bacon pieces and chorizo. Add the chopped onion and bell peppers, cooking for 3-4 minutes until the onion becomes translucent and aromatic. Assembly: In a large soup pot, combine all the ingredients, including the pre-cooked meats and spices. Stir well, cover, and bring the mixture to a simmer. Then, reduce the heat to low and let it cook for at least 30 minutes, stirring occasionally to blend the flavors. For a complete meal, serve with cornbread or warm corn tortillas.
