Vegetable Soup
Makes:
5 Liters
Ingredients
• 1/2 TBSP Butter
• 1 onion; chopped
• 1 Bell pepper; chopped
• 1/2 TBSP Salt
• 1 tsp pepper
• 1 TBSP Italian seasoningÂ
• 10-12 Cups Chicken Broth
• 1 small head of Cabbage; chopped
• 1 can of Tomato chunks
• 1 can of Green Beans
• 4-5 stacks of Celery; chopped
Preparation
• In a pan on medium heat; add 1/2 TBSP Butter, chopped onions and peppers. Saute for 5 minutes, stirring occasionally.Â
• Meanwhile, in a large Soup pot, on medium high heat; add Broth, salt, pepper and Italian seasoning.
• Add sauteed vegetables into the Broth, stir.
• Add Cabbage, Tomatoes, green beans and celery. Stir and place the lid on the soup pot.
*Add water to cover vegetables if necessary.
• Bring to a complete boil, turn down to medium low and simmer soup for 40 minutes.Â
Serve hot and Enjoy!
• Soup can be served as is or by adding your favorite carbs.Â
