Toasted Cowboy Cookies

Makes:

32 Cookies

Ingredients

• 1 Cup Margarine

• 3/4 Cup brown sugar

• 1/2 Cup granulated sugar

• 2 large Eggs

• 1 Cup plain Yogurt (substitute Yogurt by adding 1 more Egg)

• 2 teaspoons Vanilla extract

• 2 3/4 Cup Flour

• 1 tsp Baking Powder

• 1 tsp Baking Soda

• 1/2 tsp Salt

• 2 cups Chocolate Chips

• 1 cup Quick Oats

• 3/4 cup toasted chopped Walnuts

• 3/4 cup toasted Coconut flakes


Preparation

- Preheat oven to 400° F. Line baking sheets with parchment paper.

- On the stovetop put coconut and walnuts in a medium-sized pan and heat it over medium-low heat for 3-6 minutes. Be sure to stir continuously as it’s heating to promote even browning and prevent burning. Remove from heat and set aside to cool.

- In the bowl of a stand mixer; Cream together Margarine, sugar and brown sugar for about 1 minute until smooth.

- Add in the eggs, yogurt and vanilla extract and beat until just combined.

- Mix in flour, baking powder, baking soda, and salt until just combined.

- Add in the quick oats, chocolate chips, toasted walnuts, and toasted coconut flakes mix in using the paddle attachment.

- Scoop dough (ice cream Scoop works great) place onto prepared baking sheets, 6 per baking sheet.

- Bake in the Preheated oven for 8 - 10 minutes, until tops are golden brown.

- Cool for 15 minutes, transfer to baking rack to cool completely.
