Rice Krispy Oatmeal Cookies

Makes:

Ingredients

Ingredients:

• 1.5 cup Margarine, at room temp.

• 3 Cup Brown Sugar

• 3 Cup granulated Sugar

• 6 Eggs

• 1.5 Cup Heavy Cream

• 3 tsp Vanilla extract

• 6 Cups Flour

• 6 Cups Oatmeal

• 6 Cups Rice Krispies

• 1.5 Cups Pecans pieces

• 1.5 Cups Walnut pieces

• 1.5 Cups Coconut Noodles

• 3 tsp Baking Soda

• 1.5 tsp Baking Powder

• 1 tsp nutmeg

• 1 tsp ground cinnamon 

• 1.5 tsp Salt


Smaller recipe (40 cookies)

Ingredients:

• 1 cup Margarine, at room temp.

• 2 Cup Brown Sugar

• 2 Cup granulated Sugar

• 4 Eggs

• 1 Cup Heavy Cream

• 2 tsp Vanilla extract

• 4 Cups Flour

• 4 Cups Oatmeal

• 4 Cups Rice Krispies

• 1 Cup Pecans pieces

• 1 Cup Walnut pieces

• 1 Cup Coconut Noodles

• 2 tsp Baking Soda

• 1 tsp Baking Powder

• 1/2 tsp nutmeg

• 1/2 tsp ground cinnamon

• 1 tsp Salt

Preparation

Preparation:

Preheat oven to 350°F, prepare baking sheets with parchment paper.

• In a medium-sized bowl; Cream together the margarine, brown sugar, and granulated sugar until smooth with a hand mixer. 

• Beat in Eggs, then Cream and vanilla extract.

• In a separate Large Container mix all the dry ingredients, until all ingredients are well incorporated.

• Mix the wet ingredients with the dry ingredients. Mix them together until all dry is incorporated.

• Scoop the cookie dough onto the prepared baking sheets, an ice cream scoop works great. 

• Bake cookies at 350°F, 12-15 minutes until golden brown.

*Baking time depends on the size of the scoop, baking sheets and correct oven temperature.

*Chill cookie dough overnight for thicker cookies.
