Strawberry Bread

Strawberry Bread

THE BREAD:

• 3/4 cup sugar

• 1/2 cup Margarine

• 1/2 cup Buttermilk

• 1 large egg

• 1 tsp vanilla extract

• 2 cups all-purpose flour

• 1 teaspoons baking powder

• 1/2 tsp baking soda

• 1/4 tsp salt

• 2 Cups diced strawberries + 2 TBSP flour

~ FOR THE GLAZE:

• 1 Cup powdered sugar

• 1/3 Cup finely diced strawberries

• 1/2 tsp vanilla extract

• 4 TBSP heavy cream or milk


Preparation

•Preheat the oven to 350 degrees, prepare 2 - 9"x5" bread pan, brush on melted butter and dust with Flour, remove excess Flour and set aside.

•In a medium bowl, cream together the sugar and margarine.

•Next; add in Buttermilk, Egg and Vanilla extract, combine.

• Combine in the baking powder and salt.

• Mix in 2 Cups of Flour and stir until just combined.

• In a small bowl, toss together the strawberries and the 2 tablespoons of flour to coat the strawberries.

• Fold the floured strawberries gently into the batter.

• Pour equal amounts into 2 prepared 9"x5" bread pans

• Bake at 350 degrees for 50-55 minutes. A toothpick inserted in the center of the bread should come out clean.

• Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely.

Glaze:

• Combine the powdered sugar, melted butter, diced strawberries and extract in a small bowl. Mix until it is smooth.

•Once the bread is cool, spread the glaze on top of the bread.

•Slice and serve
