Migas con Chilaca

Ingredients
SAUCE -
• 3 Anaheim Peppers; roasted and peeled.
• 1/4 Onion
• 1/2 Cup Cream
• 1 Cup Milk
• 1 TBSP Chicken Bouillon powder
EGGS -
• 1 TBSP butter
• 1/4 Onion; chopped
• 2 Anaheim Peppers roasted, peeled and cut.
• 9 Eggs
• 3 Cups tortilla strips; fried
• 2 Cup Mozzarella Cheese
Preparation
SAUCE -
• Place all ingredients for the sauce into a blender and blend until smooth. Set aside.
EGGS -
• In a Skillet on medium heat; add butter and chopped onion, cook until onions are translucent.
• Meanwhile crack the eggs into a separate container; add them into the skillet, stirring occasionally to make scrambled eggs.
• Once eggs are done; add in cut Chilaca and Sauce, stir.
• Sprinkle on the Cheese, cover and cook until cheese is melted.
• Serve Hot with your favorite side.
