Fruity Pebbles Sugar Cookies
Makes:
24 - 30 Cookies
Ingredients
1 Cup Butter - at room temperature
1 1/4 Cup Sugar
1 Egg, at room temperature
2 tsp Vanilla extract
2 1/4 Cups of Flour
1 Cup Fruity Pebbles Cereal
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
+ 1 1/2 Cup Fruity Pebbles Cereal for dipping cookie dough before baking.
Preparation
• Preheat Oven to 350°F, Line baking Sheets with Parchment paper
• Cream together the Butter and Sugar until smooth, using a hand mixer or a stand mixer. Add in the Egg and vanilla, beat to incorporate ingredients.
• In a separate Bowl, Combine the rest of the ingredients. After combining the dry ingredients, add them to the Butter mixture. Mix on low speed until all ingredients are well combined.
• Using a ice cream scoop; scoop out dough, dip and roll in the a bowl of Fruity Pebbles cereal, and place on prepared cookie sheet leaving 2 inches between each cookie.
• Bake the cookies for 12-14 min at 350°F, edges just turning golden, soft in the middle.
• Cool on the baking sheet for 10 min, transfer to cooling rack to cool completely.
