Fried Potatoes

Makes:

4 Servings

Ingredients

• 7 Medium size Potatoes; peeled, sliced thinly.

• 1 Onion; sliced

• 2 TBSP Butter

• 2 tsp Salt

• 1/2 tsp pepper

• 6 eggs; whisked

Preparation

•Bring a Pot filled with Water to a boil; meanwhile Peel potatoes and slice very thin and slice Onions.

•Once water is Boiling, add in sliced potatoes. Cover and Cook Potatoes for 5min, drain water and set potatoes aside.

•In a Skillet; on medium high heat, add the butter, once butter is melted add cooked potatoes to skillet.

•Cook for 5 min on medium high heat undisturbed; with a flipper, flip potatoes to continue cooking on both sides.

• Lower heat to medium and scootsh potatoes to one side, add in the Onions.

• Stir in onions with the potatoes and cook until onions are translucent.

• Meanwhile in a medium sized Bowl add in Eggs, salt and pepper. Whisk the eggs until scrambled.

• Add whisked eggs to skillet, stir occasionally until eggs are cooked through.

• Potatoes should be fried and slightly browned.


Enjoy a traditional Mennonite meal, with a side of Fried Farmer Sausage.
