Fried Noodles & Bean Tacos
Makes:
3-4 servings
Ingredients
NOODLES
- 1 TBSP butter
- 1/2 onion; chopped
- 3-4 servings of dry spaghetti noodles; broken into 1-2 inch pieces
- 1/2 tsp salt
- 2 tsp tomato bouillon powder
- 2 cups of water
TACOS
- Corn tortillas
- Thin slices of mozzarella cheese
- Refried beans
Preparation
NOODLES - In a medium-sized saucepan, over medium-high heat; melt the butter, add onions, and cook until translucent. Add the noodle pieces and stir occasionally to toast the noodles. Once the noodles are toasted, add the salt and tomato bouillon powder, stirring in the water. Cover and cook for 8 minutes. Uncover, stir, and test the noodles. Some brands of noodles take a little longer to cook.
TACOS - In a frying pan, over medium-high heat; heat 1/2 inch of oil. Prepare your tacos, add a slice of cheese, add refried beans, and close. Fry in the heated oil, flipping once to crisp both sides.
Enjoy your meal with a side of farmer sausage.
