Chai Latte Cake

Makes:

8 Servings

Ingredients

~Spiced Cinnamon Sugar Filling

3/4 cup granulated sugar

2 1/2 tsp cinnamon

1/4 tsp ginger

1/2 tsp nutmeg

1/2 tsp cloves


~Make your own Chai Tea Spices

2 teaspoons ground cardamom

2 teaspoons ground allspice

2 teaspoons ground nutmeg

4 teaspoons ground cinnamon

2 teaspoon ground cloves

4 teaspoons ground ginger


~Brown Sugar Crumb Cake Topping

2/3 cup all purpose flour

1/2 cup brown sugar

1/2 TBSP Chai Spices (dry contents of tea bags or make your own from above recipe)

6 Tbsp. butter, cold

3 Tbsp. cinnamon sugar filling (from above)


~Coffee Cake

2 1/3 cups all purpose flour

3/4 cup granulated sugar

1/4 cup brown sugar

3 tsp baking powder

3/4 tsp salt

1/2 tsp Espresso powder

1/3 cup vegetable oil

3 eggs

1.5 TBSP Chai Spices (dry contents of tea bags or make your own from above recipe)

1 cup buttermilk

2 tsp vanilla extract

Preparation

~Preheat oven to 350° F, grease a 9” springform pan (or a 9x9” pan).

Set aside.


~Spiced Cinnamon

Sugar Filling:

In a small bowl, mix granulated sugar, cinnamon, ginger, nutmeg, cloves together.

Set aside.


~Crumb Cake topping:

*use 3 Tbsp. of the spiced cinnamon sugar (reserving the rest for the filling).

Place all the Crumb topping ingredients in a food processor, Pulsating the mixture until all the ingredients have been incorporated and the mixture resembles coarse crumbs.

Set aside.


~Chai Coffee Cake:

In a bowl, mix all the dry ingredients together, mix to combine.

Mix in the rest of the ingredients in. Stir until well combined.


1•Pour half of the batter into the pan.

2•Sprinkle spiced cinnamon sugar over the batter.

3•Top with remaining batter.

4•Sprinkle all the brown sugar crumb cake topping over the batter.


~Bake for 40-50 minutes, or until toothpick comes out clean.

*At 30 min place a piece of foil over the top of the coffee cake to avoid topping to brown to quickly.


Allow to cool 10-15 minutes before serving.
