Bacon wrapped Meatballs
Makes:
16 - 18 Meatballs
Ingredients
~ Meat Balls ~
• 2 lbs Ground Beef
• 2 cups panko or crushed crackersÂ
• 1 TBSP Italian seasoning
• 1 tsp salt
• 1/2 tsp black pepperÂ
• 2 Eggs
• 1 TBSP BBQ sauce + brushingÂ
• 1/2 TBSP Mustard
• 18 slices of raw BaconÂ
~ Sides ~Â
• Russet Potatoes, one for each personÂ
• 2-3 Onions; sliced
Yields: 16-18 Meatballs
*(1/2 Cup of meat for each ball)
Preparation
• Preheat your oven or BBQ to 375°F
• Wrap the potatoes in foil, and wrap the onion slices in a separate piece of foil. About 4 slices in each foil, add some salt and pepper before closing.Â
• Place them in the oven or on the BBQ. *these will take longer to cook than the meatballs. Rotating potatoes and onions packs occasionally to avoid burning.
• In a large bowl; Mix meatball ingredients until well combined.Â
• Scoop out meat with an ice cream scoop or 1/2 measuring cup. Form into a ball.
• Wrap one slice of bacon around the meatball, place it onto a baking tray, and continue the same process with all the mixture.
• Once finished; place the baking tray into the oven or straight onto the BBQ (without the tray)
• Cook at 375° F for 30-40 minutes, until the internal temperature of the meatballs reaches 160°F. Brush on some extra BBQ, cook for an extra 5 minutes.
• Baked Potatoes are fully cooked at 208-211˚F internal temperature.
• Onions should be soft and juicy.
